Chicken Biryani is very popular in Pakistan on many special occasions like Feasts, Weddings, Birthdays, Parties, and Picnics. Chicken Biryani is a favorite food of children and adults, and the people of all ages love to eat Chicken Biryani. about half of the World's population likes to eat rice because it is a highly digestible food.
Chicken Biryani is very important in terms of nutrition because it contains rice (carbohydrates), and chicken (protein), which is very important for our body because it provides the energy to our body and helps to grow hair, nails, and skin.
The Chicken Biryani is made up of Basmati rice, chicken, and some spices which together make it an amazing dish. Although it is often confused with something like cooked rice, Biryani is a traditional method of layered steaming, which is very time-consuming. Cooked rice and stir-fried rice, which are common in the streets, are classified as pulao and fried rice.
The recipe of chicken biryani that I am telling you today is the recipe of my father who used to cook at the weddings, engagements, and many happy occasions, and this chicken biryani was very yummy, popular, and people like it very much.
Today, I will tell you the recipe of Chicken Biryani from home spices you will not need any packet of spices for this such as Shan or National masala and it tastes like ready-made or restaurants Chicken Biryani.
INGREDIENTS OF CHICKEN BIRYANI
Basmati Rice = 400 grams
Chicken = 750 grams
Black Pepper = 1/2 teaspoon
Cinnamon Stick = 1 piece (about 3 inch)
Green Cardamoms = 6
Cumin Seeds = 1 teaspoon
Cloves = 1/2 teaspoon
Black Cardamoms = 2
Nutmeg Powder = 1 pinch (optional)
Mace Powder = 1 pinch (optional)
Star Anise = 4
Coriander Seeds = 1 teaspoon (optional)
Fennel Seeds = 1 teaspoon (optional)
Bay Leaf = 3
Red Chilli Flakes/Red Chilli Powder = 1 teaspoon
Saffron = 1 pinch
Milk = 2 tablespoons (for dissolving Saffron)
Kewra Essence = 5 to 6 drops
Chinese Salt = 1/2 teaspoon (optional)
Salt = as required/as to taste
Ginger Paste = 1 teaspoon
Garlic paste = 1 teaspoon
Green Chillies = 5 to 6
Yougurt = 70 grams
Tomatoes = 2 medium size
Lemon juice = 1 teaspoon
Onion = 2 medium size
Oil = 80 grams
Tamarind Paste = 1/2 teaspoon (optional)
Dried Plums soaked = 3 (optional)
Fresh Mint leaves =1/2 cup chopped
Water = as required

METHODS TO MAKE CHICKEN BIRYANI
1. PREPARE THE CHICKEN MARINATION.
2. PREPARE THE RICE

1. PREPARE THE CHICKEN MARINATION:
first of all, you marinate the chicken for chicken biryani, combine the garam masala (half black pepper, half cumin seeds, half cloves, 2-star anise, 1 black cardamom, 2 green cardamoms, 1 piece of the cinnamon stick), garlic paste, ginger paste, red chili powders/red chili flakes, yogurt, 1 bay leaf, and salt and mix together nicely, then Add the chicken pieces and mix well together making sure the chicken is thoroughly coated in this paste and marinade nicely.

2. PREPARE THE RICE:
Wash the rice properly and soak the rice for 30 mins. Cook the rice following method. We usually cook rice for chicken biryani for this method.
in a pan, you can use the rice boiling for preparation. you make sure that the rice doesn’t get overcooked. Every grain of your rice needs to remain separate.
CHICKEN BIRYANI BOILED RICE

first heat 1 tablespoon the ghee or oil (depend on your choice) in a wide pan and add about 1-liter water along with the whole spices (remaining cinnamon, remaining cloves, 2 bay leaf, 1 black cardamom, 2 green cardamoms, remaining cumin seeds, remaining star anise) salt to taste, wrap the fennel seeds, and coriander seeds in a cloth and make a bundle and then add in a pan, and cook on the high flame when the water boiling stove turn on medium flame and cook the rice when your rice half has done. Drain the rice and set aside with the fried onions for later use.
take the saffron and soak it in milk, so that it dissolves well in milk so that they can be put on the rice well later.
3. COOKED THE MARINATED CHICKEN:
Heat the pan add oil when oil is hot then add onions thin Slice the onion. Fry until the onions turn golden, and take half onions in a plate for later use in assembling the chicken and rice.
Add the marinated chicken and Sauté on medium heat for 4 to 5 minutes, then add tomatoes and Chinese salt.
Cook the chicken on medium heat, and stirring occasionally until the gravy is thick and oil separates. check your chicken if it's done evaporate all the water of chicken with a high flame when this process is done turn off the flame.
4. For Assembling:
Take another separate pan or pot, transfer half of the cooked rice in it, and spreading it evenly.
Then add cooked chicken evenly over rice, dried soaked plums, green chilies, 2 green cardamom powder, nutmeg powder, mace powder, chopped mint leaves, tamarind paste, and then sprinkle with lemon juice.
Add the remaining half of the cooked rice, spread it evenly, and sprinkle with saffron milk, and cover wit ha sealed lid.

keep the pan on the stove 5 minutes on high flame and then turn on low flame for 20 minutes.

1. Use scented rice Basmati rice The basmati rice used for biryani is long and very delicate. It must be cooked without breaking its shape.

 2. Remove the boiled rice from hot water and make it smooth and smooth.

3. always use heavy-bottomed pan when you cooked the chicken biryani or any type of rice.

4.use lemon juice because it helps to give smoothness of rice and every grain separate one another for lemon juice.

5. before you prepare any type of rice soaking process is very important and therefore soak the rice some minutes, it's good for rice.
